WORCESTERSHIRE SAUCE


1 cups distilled white vinegar
1 tbsp. kosher salt
1/2  tsp. whole black peppercorns
1/2  tsp. whole cloves
1 cloves garlic, smashed
1/2 cup anchovy, chopped
1 yellow onion, chopped
1⁄4 cup sugar
4 chiles de árbol, chopped
1 tablespoons Thai fish sauce (where to find Thai fish sauce)
1 cup water
1/2 lemon, peel and white pith removed, coarsely chopped
1-1/2 teaspoons olive oil
1⁄2 cup soy sauce
1⁄4 cup tamarind concentrate
3 tbsp. yellow mustard seeds
1  piece ginger, peeled and crushed
1 " stick cinnamon
1⁄2 tsp. curry powder
2 cardamom pods, smashed


1/4 cup tomato paste
