GRILLED STEAK WITH SHIITAKE MUSHROOM

1)Grilled Steak With Shiitake Mushroom

Yields: 4 Servings

steak

Marinade
1/4 cup soy sauce
3 tbsp Cabernet Sauvignon
1 tbsp minced ginger
1 tsp black pepper

8 to 10 fresh shiitake mushrooms, sliced

Sauce
1/4 cup beef broth
1/4 cup Classic Cabernet Sauvignon
2 tsp brown sugar
1 tbsp soy sauce
1 tsp toasted Sichuan peppercorns, ground
1 tsp Worchestershire sauce
1 tsp sesame oil
11/2 tsp cornstarch

2 tbsp butter
1 tbsp minced shallots
2 tsp minced garlic
2 tsp minced ginger

Method

Put the steak into a baking dish.

Add the marinade ingredients, cover the steak and let them marinate in the refrigerator for at least 2 hours or overnight.

Slice the mushrooms and set aside.

Combine the sauce ingredients in a small bowl and set aside.

Lift the beef from the marinade and grill it on a lightly greased grill over a solid bed of low-glowing coals for 4 minutes.

Turn and continue to cook until it is done to your liking, 4 more minutes for medium rare.

While the steak cooks, melt the butter in a small frying pan over medium heat.

Add the shallots, garlic and ginger.

Add the mushrooms and cook for about 2 minutes, until tender.

Add the sauce mixture and stir until the sauce boils and thickens.

Carve the steak into 1/2-inch-thick slices and top with the mushroom sauce.
